Chris: 7barrels, Christopher Enterprises

I am the West Coast distributor of Seven Barrels supporting the states here in the west including California, Arizona, Nevada, Utah, New Mexico, Washington, and Oregon.
My support includes attending live high-end craft /wine festivals and "foodie Type" oriented shows such as the annual Jackalope shows among many others.

Let us know more about your business name - how did you come up with it?

The brand name, Seven Barrels, is derived from the method of aging Balsamic vinegar in up to 7 barrels of various wood types and barrel sizes. The aging process of authentic Balsamics can range from 12 t0 25 years in time, if not more.

What is your signature style / item? How did it become so?

Our Traditionale Dark Balsamic has proven to be the mainstay of our array of dark Balsamics. This Balsamic is the most universally used in pairing with our olive oils and is infused as a base with various fruit flavors to produce unique varieties of sister Balsamics such as Vanilla Fig, Black Currant, Raspberry, Maple, etc.

What makes your business unique to the industry?

We constantly strive to produce unique varieties of both Balsamic vinegars as well as Infused EVOO olive oils. Varieties not often seen in typical stores. In doing so, much work is involved to see what works and what doesn't in regard to people's acceptance in taste. Most important is the resulting quality at an affordable price.

What's been your biggest roadblock when it comes to business and how have you been able to overcome?

Within recent years, the healthy-eating movement has been gaining continuous movement and quality vinegar and olive oils are major contenders within this movement. However, there are many competing providers producing similar products but many are so-so , some are poor, and a few have true quality at an affordable price. Introducing our quality to the public during live shows does help cross the roadblock but often shows have other vinegar/olive oil venders and being accepted as a competing vendor is difficult at times. However, we appear to be conquering the road block.

How has your business had to adapt amidst the Covid-19 Pandemic? What are you doing to navigate the situation?

Yes, the Covid-19 Pandemic adversely affected our business greatly as with many other businesses in the food industry. This situation compelled Seven Barrels to introduce special offers and discounts offered on our website to counter-act the lack of live shows and concerns of infections.

What is your favorite part of what you do?

I do miss the live shows and interacting with patrons ,especially new ones who are not familiar with Seven Barrels. Watching their faces glow once they sample a vinegar or olive oil or a pairing for the first time brings me enjoyment and a reason for being in this business. Hopefully things will open up by fall of 2021.

What is your *must do* local activity?

I continually seek out local restaurants, wine shops and perhaps higher-end markets to see whether they would be willing accept Seven Barrels either through pre-planned samplings or connected with similar themed wine tasting sessions.
